Lemon Butter Pilaf - cooking recipe

Ingredients
    1/4 c. butter
    1 c. uncooked white rice
    2 c. chicken broth
    1/4 tsp. salt
    1 tsp. grated lemon peel
    1/2 c. chopped green onion
    1/2 c. chopped tomato
    2 tsp. parsley (optional)
Preparation
    Melt butter in a 2-quart saucepan; stir in rice until well coated.
    Add chicken broth, salt and lemon peel.
    Bring to a boil, cover and reduce heat to simmer.
    Cook 30 minutes until fluffy. Fold in green onion, tomato and parsley.
