Hearty Soup - cooking recipe

Ingredients
    leftover ham bone, shoulder bone or 3 smoked ham butts
    1/2 c. dried lima beans
    1/2 c. dried split or whole peas (no need to soak)
    2 Tbsp. barley
    2 Tbsp. regular rice
    1 (16 oz.) can tomatoes
    1/2 tsp. black pepper
    8 c. cold water
    1/2 c. chopped celery
    2 large chopped onions
    2 potatoes, peeled and diced
    1 washed, unpeeled, chopped carrot
    1 clove garlic, minced (if desired)
Preparation
    Cover first 7 ingredients with 8 cups cold water; bring to boil, then simmer for 1 hour.
    Then add rest of ingredients. Bring to a boil and simmer one more hour.
    When cool, remove bones and add meat to soup.
    If soup is too thick, thin with a little cold water.
    Season to taste.
    Freezes well.
