Texas "Caviar" - cooking recipe

Ingredients
    3 (15 1/2 oz.) cans black-eyed peas with jalapenos
    3/4 c. salad oil
    1/4 c. vinegar
    1 clove garlic
    1/4 c. thinly sliced onion
    cracked, freshly ground black pepper
Preparation
    Drain peas.
    Mix all ingredients and cover.
    Store in refrigerator for 2 days.
