Apple Butter - cooking recipe

Ingredients
    4 c. cooked apple pulp or sauce (measure cooked)
    3 c. sugar
    1/4 tsp. ground allspice
    1/4 tsp. ground nutmeg
    1 tsp. ground cinnamon
    1/4 tsp. ground cloves
Preparation
    Wash the apples and cut into quarters, leaving in skins and seeds.
    Cover with water or fresh apple cider and simmer until fruit is reduced to a soft pulp.
    Press the fruit through a sieve or food mill to get pulp and juice. Discard the skins and seeds. Measure the pulp and add sugar and spices.
    Cook slowly, stirring constantly, until the mixture is very thick and has a nice, deep, reddish color.
    Pour into jars and seal.
    Makes about 2 1/2 pints.
