Ingredients

6 c. peeled and grated zucchini
6 c. sugar
2 Tbsp. lemon juice
1 (20 oz.) can crushed and drained pineapple
1/4 tsp. pineapple flavoring or omit
2 (3 oz.) pkg. apricot gelatin
Preparation

Cook zucchini and 1 cup water over medium heat; bring to boil. Reduce heat and cook an additional 6 minutes.
Add lemon juice, pineapple and flavoring.
Bring to a boil and cook 6 more minutes. Add dry gelatin; mix well.
Pour into prepared jelly jars.
