Fish Sauce Piquante - cooking recipe

Ingredients
    3 lb. fish, cut into 1 or 2-inch chunks
    4 Tbsp. shortening
    2 large onions
    1 can tomato paste
    1/2 c. green pepper
    1/2 c. celery
    1 c. water
    2 Tbsp. garlic, chopped
    4 Tbsp. parsley, chopped
    1/2 c. green onions
    salt and pepper to taste
Preparation
    Saute onions in shortening until brown.
    Add tomato paste. Cook about 5 minutes.
    Add green pepper, celery and garlic.
    Stir well; add water and cook very slowly for about an hour, stirring occasionally.
    Add green onions, parsley and chunks of fish, salt and pepper to taste.
    Cover and cook slowly 1/2 hour.
    Serve over rice.
    Garnish with additional chopped green onion.
    \"Real\" Cajuns might add Tabasco.
