Roast Hen With Dressing - cooking recipe

Ingredients
    1 medium-size hen
    4 Tbsp. corn meal
    1/2 tsp. soda
    1/4 c. buttermilk
    1 tsp. salt
    1 egg
    4 slices bread
    3-day old biscuits
    1 large onion
    3/4 c. diced celery
    5 to 6 hard-boiled eggs
    salt and pepper to taste
Preparation
    Make 1 large cornmeal pancake with corn meal, soda, buttermilk, salt and egg; crumble.
    Toast 4 slices of bread, then crumble. Also crumble 3-day old biscuits.
    Cook onion in bacon drippings until tender.
    Add celery, eggs, salt and pepper.
    Chop eggs finely and then cook onions and celery.
