Taco Burgers - cooking recipe
Ingredients

1/2 c. long grain rice, cooked
3/4 c. water
1/4 c. onion, finely chopped
1/4 c. green pepper, finely chopped
1/2 c. celery, finely chopped
2 Tbsp. oil
2 eggs
1/4 tsp. ground red pepper
1/3 c. mild taco sauce
3 Tbsp. flour
1 c. refried beans
3 (8-inch) flour tortillas, cut in small pieces
1/4 c. grated Cheddar cheese
Preparation

Cook rice in water according to package directions.
Saute onion, pepper and celery in oil.
Beat eggs with pepper and taco sauce.
Stir in beans, tortillas, cheese, cooked rice and vegetables.
Shape into patties and place onto a hot oiled griddle. Cook until browned on each side, about 4 minutes per side.
Top each patty with 1 tablespoon sour cream, just before serving if desired.
Makes 7 patties.
