Chicken-Sausage Gumbo - cooking recipe

Ingredients
    1 large hen
    1 lb. smoked sausage
    1 medium bell pepper
    2 ribs celery
    1/4 tsp. garlic
    1 Tbsp. parsley flakes
    1 large onion
    1 bunch green onions
    1/2 tsp. file
    1/2 lb. lean tasso
    pinch of real pepper
    black pepper and salt to taste
    3 qt. water
Preparation
    Save all chicken fat.
    Cut up sausage and hen and pan boil in Dutch oven until tender.
    Remove all chicken from bones.
    Save broth.
    Make roux from chicken fat, cooking oil (if needed) and flour.
    Make roux dark.
    Combine roux, broth and vegetables.
    Serve over rice.
