Bran-Apple Muffins(Low-Fat) - cooking recipe
Ingredients

1 1/2 c. flour (use whole wheat)
1 Tbsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
2 1/2 c. bran flakes
1 c. milk
3/4 c. margarine (low-fat)
1/2 c. sugar
1 egg
1 c. chopped apples
Preparation

Heat oven to 400\u00b0.
Mix flour, baking powder, cinnamon and salt in a large bowl.
Mix cereal and milk in another bowl; let stand 5 minutes.
Beat margarine and sugar in a large bowl with electric mixer on medium speed until light and fluffy.
Blend in cereal mixture and egg.
Add to flour mixture.
Stir just until moistened.
Stir in apples.
Spoon into greased muffin pan, filling each cup 2/3 full.
Bake 25 minutes.
Makes 18.
