Bread And Apple Pudding - cooking recipe

4 slices bread
2 apples
1/4 c. water
1/2 c. sugar
3 egg yolks
1 c. milk
3 egg whites
3 Tbsp. sugar
1/2 tsp. vanilla
Preparation

Remove crusts from bread and cut in quarters.
Peel and slice apples.
Combine apples with the water and let simmer on low heat until barely tender.
Add 1/2 cup sugar.
Stir gently (don't break apples).
Place bread in buttered casserole dish packing closely together.
Cover bread with the apples and juice.
Beat egg yolks until light.
Add milk and vanilla.
Mix well and pour over pudding.
Dot with bits of butter.
Bake 20 minutes.
Beat egg whites until stiff.
Add sugar.
Spread over pudding and brown in oven.
