Thai Chicken Fettuccine Salad - cooking recipe

Ingredients
    1 c. picante sauce
    1/4 c. chunky peanut butter
    2 Tbsp. honey
    2 Tbsp. orange juice
    1 tsp. soy sauce
    1/2 tsp. ground ginger
    6 oz. uncooked fettuccine, cooked and drained
    3 chicken breasts, boned, skinned and cut into 1-inch blocks
    2 Tbsp. vegetable oil
    lettuce or savoy cabbage leaves (optional)
    1/4 c. coarsely chopped cilantro
    1/4 c. peanut halves
    1/4 c. thin red pepper strips
Preparation
    Combine picante sauce, peanut butter, honey, orange juice, soy sauce and ginger in a small saucepan.
    Cook and stir over low heat until blended and smooth.
    Reserve 1/4 cup picante sauce mixture.
