Pumpkin Roll - cooking recipe

Ingredients
    3 eggs
    2/3 c. pumpkin
    1 tsp. baking soda
    1 c. sugar
    1 tsp. ginger
    3/4 c. flour
    2 Tbsp. cinnamon
    1 tsp. lemon juice
    1/2 tsp. nutmeg
Preparation
    Beat eggs on high speed 5 minutes.
    Gradually stir in sugar, pumpkin and lemon juice.
    Mix rest of ingredients.
    Grease and flour long cookie sheet.
    Spread mixture about 1-inch thick.
    Bak at 375\u00b0 for 15 minutes or less.
    Sprinkle dish towel with powdered sugar and flip cake onto towel.
    Sprinkle cake with powdered sugar. Starting at narrow end, roll the towel and cake together.
    Cool, then unroll for filling.
    Spread filling over unrolled cake.
    Roll up cake and chill before serving.
    Can be wrapped in foil and frozen.
