Ingredients

1 c. all-purpose flour
3 Tbsp. sugar
3/4 tsp. baking soda
1 tsp. ground cardamom
4 oz. shredded Gjetost cheese (1 c.)
4 eggs, separated
1 c. sour cream
3 Tbsp. melted butter
confectioners sugar
fresh berries
whipped cream (optional)
Preparation

Sift flour, sugar, baking soda and cardamom into large bowl. Add cheese and toss to separate and prevent lumping.
To second bowl, beat egg yolks well.
Beat in sour cream.
Fold in flour mixture.
Beat egg whites until stiff, but not dry.
Fold into batter, half at a time, then lightly fold in butter.
Pour 1/2 cup batter onto hot waffle iron.
Bake until steaming stops, 2 to 3 minutes.
Serve hot with sugar, berries and whipped cream.
Makes 6 waffles.
