Andrea'S Enchiladas - cooking recipe

Ingredients
    12 oz. Monterey Jack cheese
    12 oz. Cheddar cheese
    2 (28 oz.) cans Las Palmas red chile sauce (not enchilada)
    2 to 3 doz. corn tortillas
    1 large sour cream
    1 to 2 onions (to taste)
    1 bunch green onions
    4 tomatoes
    2 cans olives
    shredded chicken, beef or ground beef (optional)
Preparation
    Grate both cheeses. Set aside a little for sprinkling on top. Chop the onions, green onions, tomatoes and olives; set aside.
