Shrimp Casserole For A Crowd - cooking recipe
Ingredients

1 green pepper, chopped
2 stalks celery, chopped
1 medium onion, chopped
2 c. water
small can pimentos, chopped
3 lb. cooked, deveined shrimp
1 can crabmeat
4 hard-cooked eggs, cut in thick slices
4 Tbsp. butter
4 Tbsp. flour
2 c. light cream
1 c. shredded sharp Cheddar cheese
1/2 tsp. salt
1/8 tsp. pepper
3/4 c. buttered bread or cracker crumbs
Preparation

Combine chopped pepper, celery, onion and water and cook until vegetables are tender.
Drain.
Add pimentos, shrimp, crabmeat and eggs.
Make cheese sauce:
melt butter and stir in flour until smooth.
Gradually add cream and cook until mixture thickens, stirring constantly.
Add cheese, salt and pepper.
Add sauce to shrimp mixture and put in 3-quart casserole dish.
Sprinkle crumbs over top and bake at 400\u00b0 for 15 minutes.
Yields 12 to 15 servings.
