Italian Sausage Stuffed Mushrooms - cooking recipe

Ingredients
    1 1/2 lb. bulk Italian sausage
    snow capped white large mushrooms
    olive oil
    3 cloves minced garlic
    4 Tbsp. minced sweet Spanish onion
    1/4 c. chopped leaf parsley
    1/2 tsp. dried basil
    1/2 tsp. dried oregano
    2 eggs
    1/4 c. bread crumbs
    1/2 c. grated Parmesan cheese
    shredded Mozzarella (to top)
Preparation
    Fry sausage to golden brown and drain well. De-stem mushrooms (save stems). De-gill and discard gills. Chop stems coarse and reserve. Saute chopped stems in olive oil. Add garlic, onion, basil and oregano; cook until mushrooms and onions are translucent. Combine sausage, beaten eggs, mushroom mixture, bread crumbs and Parmesan cheese. Place mushrooms in 9 x 13 pan and stuff with mixture. With remaining mixture, sprinkle pan generously using the entire mixture. Add shredded Mozzarella on top and bake at 350\u00b0 for 30 minutes.
