Portuguese Rice Pudding - cooking recipe

Ingredients
    1 c. rice
    5 c. milk
    1/2 to 3/4 c. sugar
    1 piece orange rind
    1 cinnamon stick
    pinch of salt
    1 Tbsp. margarine
Preparation
    In medium-size pan, bring the milk to a boil.
    Drizzle the rice in slowly so that the milk continues to boil.
    Add sugar, cinnamon, salt, rind and butter; stir occasionally.
    Boil, uncovered, for about 5 minutes.
    Remove the rind and cinnamon stick and pour the mixture into a 2-quart bowl or individual dishes.
    Sprinkle lightly with cinnamon.
    Serve with a dollop of light cream.
    Serves 6 to 8.
