Texas Squash Skillet - cooking recipe

Ingredients
    4 Tbsp. butter
    1 large onion, chopped
    1 small green pepper, chopped
    1 clove garlic, minced
    2 to 3 lb. squash, sliced
    4 fresh tomatoes, peeled and chopped
    1 1/2 tsp. salt
    1/4 tsp. pepper
    1/4 c. grated Parmesan cheese
Preparation
    In a large skillet, saute onion, green pepper and garlic. Stir in squash, tomatoes and seasoning.
    Cook over low heat, stirring occasionally, until squash is tender.
    Sprinkle cheese over top and serve.
