Minestrone Soup - cooking recipe
Ingredients

3 gal. beef stock
1 c. presoaked lima beans
1 3/4 c. presoaked navy beans
1 c. presoaked split peas
6 oz. spaghetti
7 oz. rice
1/2 c. grated onion
3 lb. potatoes, diced small
4 cloves garlic
1 Tbsp. thyme
1 1/2 c. celery, diced small
5 oz. carrots, cubed
12 oz. cabbage, chopped
2 qt. canned tomatoes
1/2 c. salad oil
2 c. flour
salt and pepper
Preparation
-
Boil first 4 ingredients 1 hour.
Add spaghetti, boil 1 hour more.
Add next 9 ingredients and boil 1 hour longer.
Mix oil and flour with a little soup and then add to the soup to thicken. Yields 57 (1-cup) servings.
