Scalloped Corn - cooking recipe

Ingredients
    1 box Jiffy corn muffin/bread mix
    2 cans creamed corn
    4 eggs, beaten
    1 c. oil
    1 tsp. minced onion
    1 c. grated Cheddar cheese
    pimento (optional)
Preparation
    Mix all of the ingredients.
    Place in a deep casserole dish (1 to 2-inches extra room to rise).
    Bake at 350\u00b0 for 45 to 60 minutes, depending on dish depth.
