Jewish Apple Cake - cooking recipe

1 c. cooking oil
4 unbeaten eggs
2 1/2 c. sugar
3 c. flour
1/2 tsp. salt
3 tsp. baking powder
1/3 c. orange juice
2 1/2 tsp. vanilla
6 large apples, sliced 1/8 to 1/4-inch thick
2 tsp. cinnamon
3 Tbsp. sugar
Preparation

Slice apples 1/8 to 1/4-inch thick.
Mix with cinnamon and 3 tablespoons sugar in a large bowl and set aside.
Mix eggs, oil and 2 1/2 cups of sugar until smooth.
Add alternately to batter the dry ingredients (flour, salt and baking powder) and wet ingredients (orange juice, vanilla), starting and ending with dry ingredients.
