Okra Etouffee - cooking recipe

Ingredients
    3 c. sliced fresh or frozen okra
    1/4 c. vegetable oil
    1 (10 oz.) can diced tomatoes and green chilies, drained
    1 medium size green bell pepper, chopped
    1 medium onion, chopped
    3/4 tsp. salt
    1/8 tsp. pepper
    3/4 c. crushed potato chips
    1/4 c. fine dry breadcrumbs
Preparation
    Place okra in a lightly greased 1 1/2-quart baking dish; drizzle with oil. Top with tomatoes and green chiles, onion and bell pepper; sprinkle with salt and pepper. Cover loosely with aluminum foil. Bake at 400\u00b0, stirring occasionally, 1 hour. Stir together potato chips and breadcrumbs; sprinkle over casserole. Bake, uncovered, 15 more minutes or until lightly browned. Serve over rice, if desired. YIELD: 6 servings.
