Light Lemon Squares - cooking recipe

Ingredients
    1 c. sifted cake flour
    1/4 c. powdered sugar
    1/4 c. fat-free cream cheese
    3 Tbsp. vegetable oil
    3 egg whites
    3/4 c. sugar
    1 1/2 Tbsp. grated lemon zest
    2 Tbsp. flour
    1/2 tsp. baking powder
    1/4 tsp. salt
    1/3 c. fresh lemon juice
Preparation
    Mix first four ingredients until crumbly.
    Press into the bottom of 8-inch square pan that has been sprayed with nonstick spray.
    Bake at 350\u00b0 for 20 to 25 minutes.
    Beat egg whites, sugar and zest until smooth.
    In small bowl, stir together flour, baking powder and salt.
    Add the egg mixture and blend.
    Mix in the lemon juice.
    Pour over hot crust and bake for 20 minutes or until top is light golden brown and set.
    Let cool in the pan on a rack. Spray a sharp knife with nonstick cooking spray and cut into squares.
    Makes 16 squares.
