Salmon Cakes(Serves 6) - cooking recipe

Ingredients
    1 (14 3/4 oz.) can pink salmon
    1/2 c. saltine cracker crumbs
    1/8 c. cornmeal
    1 large egg, slightly beaten
    1/4 tsp. salt
    1/4 tsp. pepper
Preparation
    Drain salmon.
    Reserve liquid (set aside).
    Remove skin; flake salmon with fork and set aside.
    Combine cracker crumbs and reserved liquid.
    Let stand 5 minutes (or until liquid is absorbed); stir in salmon, cornmeal and next 3 ingredients.
    Shape into patties.
    Fry in hot oil on medium heat until brown, turning once.
    Drain on paper towel.
