Cowpoke Beans - cooking recipe
Ingredients

1 lb. pinto beans
chopped ham pieces to taste
1 clove garlic, minced
1/2 tsp. ground cumin
1/2 Tbsp. marjoram
1/2 lb. bacon or salt pork
1 large onion, chopped
1 pt. tomatoes, broken up
1 Tbsp. chili powder
1 (4 oz.) can chopped green chilies
Preparation

Cover beans with water and bring to boil and let cook 2 minutes.
Turn off heat and let set 1 hour.
Add ham, bacon, onion and garlic.
Again bring to boil, turn down, and simmer until beans are cooked.
Pour off part of juice and reserve.
Add tomatoes and spices and cook for about 1/2 hour longer.
Add some reserved juice to keep beans from sticking.
