Sue'S Potato Soup - cooking recipe

Ingredients
    5 large potatoes
    1/4 onion chopped
    1/2 c. celery chopped
    1 small carrot grated
    1 stick butter
    2 cans evaporated milk
    3 Tbsp. flour
    2 inches of Velveeta cubed
Preparation
    Peel and dice potatoes, put in 4-quart pan along with chopped onion, celery and grated carrots.
    Just barely cover with water. Boil until potatoes are just barely done.
    Reduce heat.
    Add butter and evaporated milk.
    Mix flour with a little water or save enough milk to mix with.
    Add flour mixture to potatoes.
    Add cubed Velveeta.
    Let it melt and salt and pepper to taste.
