Miracle Cupcakes - cooking recipe

Ingredients
    2 c. cake flour
    2 1/2 tsp. baking powder
    3/4 tsp. salt
    1/3 c. shortening
    1 c. sugar
    1 egg (unbeaten)
    3/4 c. milk
    1 tsp. vanilla or 1 Tbsp. lemon rind
Preparation
    With electric mixer at \"cream\", mix shortening and sugar.
    Add egg and mix until light and fluffy, about 4 minutes.
    At low speed, blend/beat alternating flour, baking powder and salt mixture with milk and vanilla until smooth.
    Pour batter into cupcake pan which has been lined with paper cups or greased and dusted with flour. Bake at 375\u00b0 for 20 minutes or longer depending on oven.
