Ingredients

4 1/2 lb. green mangoes, peeled and sliced
2 large onions, chopped
2 large green peppers, chopped
2 garlic cloves, or 1/4 tsp. garlic powder
1/2 c. raw ginger, grated, or 1 Tbsp. powdered ginger
1 c. seedless raisins or local fruit
4 c. white vinegar
3 c. brown sugar
1 Tbsp. cinnamon
2 tsp. salt
1 tsp. allspice
1 tsp. ground cloves
1/4 tsp. cayenne pepper
Preparation

Bring mixture to a boil.
Reduce heat and simmer until the fruit is tender.
Cook approximately 1 hour, stirring from time to time, to prevent fruit from burning.
