Ingredients

1 gal. beets
4 c. sugar
1 qt. vinegar
1 Tbsp. pickling spice
Preparation

Cook beets
over
medium
heat
until
tender; cool and peel. Heat vinegar and sugar until sugar is dissolved.
Bring to a rolling
boil.
Add beets and pickling spice and bring to a rolling boil.
Pack into hot jars and seal at once.
