Pineapple-Lime Snow - cooking recipe

Ingredients
    1 (20 oz.) can crushed pineapple in own juice
    water
    1 (6 oz.) pkg. lime gelatin
    1 (8 oz.) carton Cool Whip
    1 (32 oz.) carton small curd cottage cheese
    1 (11 oz.) can mandarin oranges, drained
    1 1/2 c. chopped walnuts
    1/4 c. shredded coconut
    mint leaves (for garnish)
    maraschino cherries (for garnish)
Preparation
    Drain pineapple well, reserving syrup.
    Combine reserved syrup and enough water to measure 1 cup in saucepan.
    Heat to a boil. Add lime gelatin.
    Reduce heat and cook, stirring, until gelatin is thoroughly dissolved.
    Remove from heat.
    Add 1 cup cold water. Set aside and refrigerate until gelatin is consistency of egg whites.
