Cod With Vegetables - cooking recipe

Ingredients
    1 lb. cod fillets, washed and patted dry
    2 Tbsp. vegetable oil
    2 large onions, thinly sliced
    4 large garlic cloves, minced
    3 carrots, thinly sliced
    1/8 tsp. thyme
    1/8 tsp. oregano
    salt
    tamari or soy sauce
Preparation
    Place cod in a large skillet and pour 1/2 cup water over. Cover and simmer for 5 minutes.
    Remove fish.
    In a separate skillet, heat oil and saute onions, garlic and carrots until onion is transparent.
    Pour fish cooking water over; add herbs, cover and simmer for 15 minutes.
    When carrots are barely tender, gently place fish on top of vegetables; heat through.
    Taste and season with a little salt and tamari, as desired.
    Serve with brown rice.
