Company Potatoes - cooking recipe

Ingredients
    6 potatoes, cooked and diced
    1 onion, diced
    3 or 4 slices bread, cut into bite-size squares
    3 or 4 eggs
    spices as desired (salt, pepper)
    2 Tbsp. oil
Preparation
    Heat 2 tablespoons oil in a large skillet.
    Add potatoes and onion.
    Cook until brown, turning often.
    In a large bowl, mix bread, eggs and spices.
    Add to potato mixture.
    Cook until eggs are done, about 5 minutes.
    If company arrives unexpectedly, just add more bread and eggs.
    Serves 6 people.
