Avocado-Carrot Salad - cooking recipe

Ingredients
    2 avocados, mashed
    2/3 c. grated carrot
    1 green pepper, minced
    1 Tbsp. finely minced onion
    1/4 c. sunflower seeds
    2 Tbsp. cider vinegar
    1/4 c. salad oil
    1/8 tsp. sea salt
Preparation
    Toast sunflower seeds if desired.
    Mix well with avocado, carrot, green pepper and onion.
    Mix remaining ingredients to make dressing.
    Scoop avocado mixture onto a bed of greens.
    Add dressing and garnish with parsley sprigs or lemon peel.
    Serves 4.
