Santa Fe Chicken Heroes - cooking recipe

Ingredients
    6 boneless, skinless chicken breast halves
    1 Tbsp. vegetable oil
    1/2 tsp. crushed red pepper flakes
    1/4 tsp. chili powder
    6 slices Monterey Jack cheese
    6 French or Italian rolls, split
    2 Tbsp. butter
    tomato slices
    lettuce leaves
    salsa (optional)
Preparation
    Pound chicken to flatten evenly. Brush both sides with oil. Combine seasonings; sprinkle on both sides of chicken.
    Grill over medium-hot coals for 6 to 8 minutes.
    Turn and grill 4 to 6 minutes more or until chicken is tender and no longer pink. Top with cheese.
    Allow to melt, about 2 minutes. Brush rolls with butter. Grill until toasted.
    Place lettuce, tomato and chicken on rolls. Top with salsa, if desired.
