Mexicana Tamale Pie - cooking recipe

Ingredients
    1 1/2 lb. ground beef
    1 pkg. (1 1/4 oz.) taco seasoning
    1 (11 oz.) can whole kernel corn, drained
    1 (10 oz.) can tomatoes with green chiles
    1/2 c. each chopped green and red pepper
    2 cans French fried onion rings
    1 (8 1/2 oz.) pkg. corn muffin mix
    1/2 c. shredded Cheddar cheese
Preparation
    In large skillet, brown ground beef; drain.
    Stir in taco seasoning, corn, tomatoes, peppers and 1 can onions; pour mixture into 2 quart casserole.
    Prepare corn muffin mix according to package.
    Spoon batter around edge of beef mixture.
    Bake, uncovered, at 400\u00b0 for 20 minutes or until corn bread is done.
    Top corn bread with cheese and remaining onions; bake, uncovered, 1 minute until onions are golden brown.
