Granny Decoster'S Green Tomato Mincemeat Pie Filling - cooking recipe

Ingredients
    1 peck chopped green tomatoes (8 qt.)
    1 c. vinegar
    4 c. water
    1/2 lb. margarine
    2 lb. raisins
    3 lb. white sugar (6 c.)
    1 Tbsp. each cinnamon, allspice, cloves and nutmeg (may add more to taste)
    1 lb. brown sugar
    1 to 2 tsp. salt
    1 orange, chopped whole
    1 lemon, chopped whole
    any leftover jelly or spiced vinegar
    3/4 c. rum (optional)
    8 qt. canning jars
Preparation
    Wash, cut up green tomatoes and put through food chopper. Rinse in cold water and drain in colander.
    Cook slowly in a large kettle for 2 hours in the vinegar and water.
