Zucchini Corn Muffins - cooking recipe
Ingredients

12 oz. zucchini
1/2 tsp. salt
1 1/4 c. all-purpose flour
3/4 c. corn meal
1 Tbsp. baking powder
2 tsp. sugar
3/4 tsp. salt
few grains ground hot red pepper
3/4 c. buttermilk
3 Tbsp. vegetable oil
1 egg
1/2 c. shredded sharp Cheddar cheese (2 oz.)
1 large green onion, finely chopped
Preparation

Preheat oven to 425\u00b0.
Coat inside of 16 medium size muffin cups with nonstick cooking spray.
Shred zucchini.
Place in colander over bowl.
Sprinkle with salt.
Set aside.
