Souffle Au Chocolat (From Moustache Cafe) - cooking recipe

Ingredients
    2 Tbsp. butter
    2 Tbsp. granulated sugar
    1/2 c. butter
    1/2 c. flour
    2 c. milk
    8 oz. dark chocolate
    7 egg yolks, lightly beaten
    9 egg whites
    3/4 c. granulated sugar
    confectioners sugar
Preparation
    Using the 2 tablespoons of butter, coat the inside of 6 individual souffle dishes.
    Sprinkle in the 2 tablespoons of granulated sugar to coat the inside.
    Shake out the excess sugar. Make a roux by melting 1/2 cup of butter in a saucepan; add the flour, stirring constantly.
    Set aside.
    Place the milk and chocolate in another saucepan; stir constantly over low heat until chocolate melts.
    Add the chocolate mixture to the roux.
    Heat for 1 minute while stirring.
    Remove mixture from heat and add the yolks.
    Mix well using spatula; set aside.
