Ingredients

2 c. all-purpose flour
4 tsp. baking powder
1 tsp. salt
3 Tbsp. sugar
2 eggs
2 c. milk
1/3 c. melted shortening
Preparation

Sift flour, measure and resift with baking powder, salt and sugar.
Beat eggs in mixing bowl, add milk and mix.
Stir in shortening; then add flour mixture all at once.
Beat until smooth.
Have griddle heated moderately hot.
Grease lightly. Pour out 1/4 cup batter for each cake.
Leave until top side is full of air bubbles and underside is brown, then turn and brown.
