Coconut Pie Filling(Diabetic, Sugar-Free) - cooking recipe

Ingredients
    1 (4 oz.) can coconut
    1 c. milk
    4 oz. egg substitute
    1 heaping Tbsp. flour
    1/2 c. milk
    pinch of salt
    1 tsp. vanilla
    1 tsp. butter or margarine
    1 baked pie crust
    Cool Whip, whipped cream or meringue
Preparation
    Soak coconut in milk and add next 4 ingredients.
    Cook until filling begins to boil.
    Remove from heat.
    Add vanilla and butter or margarine.
    Cool; pour into baked pie crust.
    Top with either Cool Whip, whipped cream or meringue.
