Mimi'S Mexican Chicken Soup - cooking recipe
Ingredients

1 Tbsp. vegetable or olive oil
1 onion, chopped
2 cloves garlic, finely chopped
1 large red bell pepper
1 qt. homemade chicken broth
1/5 c. fresh lime juice
1 boneless cooked chicken breast, shredded
1 c. cooked rice
1 c. chopped tomatoes
1/2 c. chopped fresh cilantro
Preparation

Saute onion, garlic and bell pepper in oil until soft and fragrant.
Add chicken broth; bring to boil.
Add lime or lemon juice, chicken and rice.
Add tomatoes and cilantro.
Turn off heat.
Add salt and pepper to taste.
Garnish with extra cilantro.
