Swiss Chicken - cooking recipe

1/2 c. (1 stick) margarine
1/2 c. uncooked rice
1 medium onion, chopped
1 (10 1/2 oz.) can cream of mushroom or chicken soup
2 (10 1/2 oz. each) cans chicken broth
4 chicken breasts
3/4 lb. (12 oz.) whole, fresh mushrooms
8 oz. (1/2 lb.) sliced Swiss cheese
water as needed
