St. Simon'S Shrimp Dijon - cooking recipe

Ingredients
    2 lb. unpeeled fresh shrimp
    2 Tbsp. corn oil margarine
    1/2 c. dry white wine
    2 Tbsp. fresh parsley, minced
    2 Tbsp. fresh lemon juice
    1 tsp. garlic, minced
    1/2 tsp. Dijon mustard
    1/4 tsp. salt
    hot cooked rice
    Parmesan cheese
Preparation
    Peel and devein shrimp.
    Dry with paper towels.
    Melt margarine; add shrimp.
    Saute 5 minutes.
    Place shrimp in dish in low oven.
    To skillet add wine, parsley, lemon juice, garlic, mustard and salt.
    Cook 3 minutes.
    Place shrimp in skillet.
    Heat to serving temperature; do not overcook.
    Serve over rice. Garnish with Parmesan cheese.
