Baked Potato Salad - cooking recipe

Ingredients
    8 bacon slices
    salad oil
    1/2 c. finely chopped onion
    2 tsp. salt
    1/4 tsp. pepper
    1/3 c. vinegar
    4 tsp. sugar
    2 (1 lb.) cans white potatoes, drained and sliced
    1/3 c. finely chopped green pepper
Preparation
    Preheat oven to 375\u00b0.
    Saute bacon until crisp; drain on paper towels and crumble.
    Put bacon fat into a 1-cup measure; add enough oil to make 2/3 cup.
    Pour into skillet.
    Add onion, salt, pepper, vinegar and sugar.
    Simmer, uncovered, for 3 minutes.
    In a 1 1/2-quart casserole, lightly toss potatoes, green pepper, crumbled bacon and hot dressing.
    Bake, uncovered, for 20 minutes. Drain off excess liquid.
    Makes 6 servings.
