Green Tomato Pickles - cooking recipe

Ingredients
    1 1/2 gal. quartered tomatoes
    3 qt. chopped bell pepper
    3/4 c. salt
    1/2 gal. vinegar
    3 qt. chopped onions
    1 pt. chopped hot peppers
    8 c. sugar
Preparation
    Quarter green tomatoes.
    Pour salt over them and mix.
    Let stand 3 hours.
    Pour brine off.
    Add rest of ingredients.
    Bring to a boil, then simmer for 10 minutes.
    If overcooked, tomatoes will not be crisp.
    Makes 8 quarts.
