Southern Baked Corn Casserole - cooking recipe

Ingredients
    2 eggs, slightly beaten
    1 (16 oz.) can corn, drained
    1 (16 oz.) can creamed corn
    1/2 c. melted margarine
    1 c. sour cream
    salt and pepper to taste
    1 box dry Jiffy corn muffin mix
    1 c. shredded Swiss or Cheddar cheese (optional)
Preparation
    Combine all ingredients in a large bowl. Mix thoroughly and spread in an ungreased baking dish.
    Bake at 350\u00b0 for 45 minutes or until golden brown on top.
    Last few minutes of baking, sprinkle cheese on top and finish baking until cheese is melted.
