Ingredients

1 Tbsp. olive oil
4 to 6 drumsticks
2 shallots or 1/4 c. chopped onions
pepper to taste
2 large mushrooms, quartered
1 sweet potato, chopped
1/2 c. white wine or chicken stock
Preparation

Heat oil over medium-high heat in Dutch oven.
Brown drumsticks on both sides.
Add shallots, mushrooms and potato. Pepper lightly.
Pour in white wine or chicken stock.
Cover and lower heat.
Simmer for 20 minutes.
