Club Chicken Casserole - cooking recipe

Ingredients
    1/4 cup butter
    1/4 cup plain flour
    1 cup chicken broth
    1 can cream of mushroom soup
    dash of cayenne pepper
    1 - 2 1/2 pound broiler, boned and coarsely chopped, after cooled
    3 cups cooked rice
    1 - 3 oz. jar chopped pimentos
    1 - 2.5 oz. jar sliced mushrooms
    1 medium onion, diced
    1 1/2 cups grated sharp cheese
Preparation
    Melt butter, blend in flour. Gradually add chicken broth to make a smooth sauce. Cook over low heat until thick. Stirring constantly. Add soup and cayenne pepper. Add chicken, rice, mushrooms, pimentos and onion. Pour into greased 2 quart casserole. Top with cheese. Bake at 350\u00b0 for about 30 minutes.
