Golden Potato Squares - cooking recipe
Ingredients

5 lb. potatoes
1 1/2 c. chopped onion
2/3 c. melted butter
1 c. evaporated milk
4 eggs, beaten
salt and pepper to taste
1 1/2 c. Cheddar cheese
1/4 c. parsley
Preparation

Peel and shred potatoes (raw).
Place in cold water for 10 minutes; drain good.
Saute onion in butter.
Add milk and simmer. Combine eggs, salt and pepper to potatoes.
Add 1 cup cheese; stir in milk.
Pour into a 9 x 13-inch pan.
Bake at 350\u00b0 for 1 hour.
Sprinkle 1/2 cheese on top.
Bake at 375\u00b0 for 30 minutes. Cut into squares and serve.
